Ingredients

Pizza dough

  • 170g mozzarella
  • 30g coconut flour (or 85 g almond flour)
  • 35 g cream cheese
  • 1 egg
  • 1 pinch of salt
  • other flavorings for your dough (e.g. garlic powder)

Topping ideas

Salami Pizza topping

  • 3 tbsp tomato sauce
  • 135 g pizza cheese
  • 25 g salami
  • 30 g mozzarella
  • oregano

Diavolo Pizza topping

  • 3 tbsp tomato sauce
  • 25 g salami
  • 30 g mozzarella
  • dried tomatoes and chili peppers

Instructions

  1. Pre-heat oven at 220°C while you are preparing the dough.
  2. Mix cheese and flour in a microwaveable bowl. Add the cream cheese. Microwave on high for ~ 1 minute.
  3. Stir – then microwave on high for another 30 seconds.
  4. Add the egg, salt, any other flavorings, mix gently.
  5. Place in between 2 pieces of baking paper and roll into a circular pizza shape. Remove the top baking paper afterwards. (If the mixture hardens and becomes difficult to work with, pop it back in the microwave for 10-20 seconds to soften again but not too long or you will cook the egg.)
  6. Make fork holes all over the pizza base to ensure it cooks evenly.
  7. Slide the baking paper with the pizza base, on a baking tray and bake at 220°C for 12-15 minutes – or until brown. (To make the base really crispy and sturdy, flip the pizza over once the top has browned.)
  8. Once cooked, remove from the oven and add all the toppings you like. Make sure any meat is already cooked as this time it goes back into the oven just to heat up the toppings and melt the cheese.
  9. Bake again at 220°C for 5 minutes.
  10. Enjoy!
