Ingredients

  • ¾ cup almond flour
  • ¼ cup flaxseed meal
  • ⅓ cup erythritol
  • 2 Tbsp poppy seeds
  • ¼ cup salted butter
  • 4 medium eggs
  • ¼ cup heavy cream
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 25 drops liquid Stevia
  • Zest of 2 or 3 lemons
  • 3 Tbsp lemon juice
  • (optionally) lemon essence for a more intense lemon flavor

Instructions

  1. While pre-heating oven to 180 °C combine together (in a big bowl)
    • almond flour
    • flaxseed meal
    • erythritol
    • poppy seeds
  2. Then add to the mix (mix until smooth)
    • melted butter
    • eggs
    • heavy cream
  3. Then add (again mix until well combined)
    • baking powder
    • vanilla
    • stevia
    • lemon zest
    • lemon juice
  4. Fill 12 cupcake molds evenly.
  5. Bake for ~20 minutes or until slightly brown.
  6. Let cool for ~ 10 minutes and enjoy!
